Healthy Mushroom, Spinach & Egg Scramble

The classic scramble; healthy, easy, and tasty.
 
 
 
 

Ingredients

  • 4 large mushrooms

  • Baby Spinach

  • 2 eggs

  • 2 pieces wholemeal bread

  • 20g cheese

  • Splash of soymilk

  • ½ tsp oregano

  • Some olive oil

  • 0.8g salt

Method

  1. Chop up the mushrooms and start frying in olive oil.

  2. Crack eggs into bowl, add soymilk and oregano, then mix with a fork.

  3. Once mushrooms are half cooked, add egg mixture in and stir around.

  4. Keep stirring every so often.

  5. If you want to toast the bread now is the time!

  6. Serve and have a great day.

What We like About It

This is a great one for breakfast or lunch, it gives you one serve of protein, one serve of grains, and around four serves of vegetables between the mushrooms and spinach, along with some cheese to make it tasty and for fat soluble vitamins.
